Food Choices

Our Executive Chef Jim Pohl, a graduate of the Culinary Institute of America, looks forward to working with you planning a delicious menu. With advance notice he can try to accommodate dietary restrictions.

Plated and Served (up to 64 people)

A dinner would typically be a homemade soup, salad and entrée. Click on the link to read descriptions of various entrees we offer on our dinner cruises. We can offer up to five entrée choices.  Another option is to ask the chef to cost out a customized menu of your choosing. 

Buffet Style (up to 56 people)

There isn’t time for a sit-down plated service meal during two hour cruises.   We offer a buffet with one carbohydrate, one vegetable, two proteins, salad, fresh fruit, baguettes and butter, and dessert plus coffee, decaf or tea. If you would like a carving station for one of the proteins, that option can be priced out, depending on the protein you choose. Click here to view our buffet menu.

Cocktail Party-grazing Style (up to 64 people)

Perhaps you prefer or your numbers dictate a “grazing” format, with elegant hors d’oeuvres, both passed and stationary, utilizing the dining room and open upper deck (weather permitting).  Price for this option and number of appetizers are determined by the time slot you choose.

Cold Hors d’Oeuvres (List A)
  • Cold display to include sliced seasonal fruits with assorted cheeses and crackers
  • Vegetable crudité with herbal dip
  • Smoked salmon w/ dill horseradish sauce
  • Nova salmon on puff pastry with red onion, tomato and cream cheese
  • Sliced salami with pecorino cheese
  • Tortilla chips with black bean dip or house salsa
  • Bruschetta, an Italian salsa served with crostini and Romano cheese
  • Marinated mushroom caps
  • Peel-n-eat shrimp with sauce
  • Guacamole with pita triangles
  • Hummus with pita triangles
  • Spinach & artichoke dip
  • Caprese Bites (Mozzarella, tomato, fresh basil, reduced balsamic)
Hot Hors d’Oeuvres (List B)
  • Beef satay with Oriental dipping sauce
  • Swedish meatballs in a rich brown sauce
  • Mushroom caps with your choice stuffing (seafood, sausage, vegetarian)
  • Baked brie soaked in Kahlua with crackers
  • Flank steak or pulled pork sliders
  • Marinated grilled veggies
  • Walnut goat cheese bites (mixed with honey and spices)
Premium Hors d’Oeuvres (List C)
  • Peeled and deveined  U-12 shrimp with sauce 
  • Beef tenderloin at a carving station with rolls & horseradish sauce 
  • Lollipop Lamb Chops 
  • Glazed bacon
  • Sesame seared Ahi tuna, sided with a marinated cucumber salad and a spicy dipping sauce
  • Ginger-honey-soy glazed barbecued salmon skewers
  • Bacon-wrapped sea scallops
Wedding Cake

You should make your own arrangements for a traditional wedding cake. Rachel can give you the names of local bakers in the area or you can contract with your own baker or maybe a friend wants to make your cake as a wedding gift.


Bar Options

(Raquette Lake Navigation is fully insured.) There are four options. Our beverage manager  will advise you on various bar options after she has interviewed you to find out your preferences. You may not bring your own liquor, wine, beer, water or soft drinks.

Premium Open Bar

  • Pouring any wines by the glass and any well, call & premium spirits that we carry as well as our beers (domestic in cans- Bud, Bud Light, Blue Light, Coors Light; Corona & Beck’s N/A in bottles; 4-5 NYS Craft Beers)
  • Includes anything off of our specialty cocktail drink list.
    • Pricing: $12.95 for the first hour and $10.95 for each additional hour per person for every guest age 21 and older, plus 8% tax and 20% service charge.
  • Non-alcoholic options consist of iced tea, lemonade, soda, juice, coffee and hot tea.
    • Pricing: $15 per person under age 21 for entire charter, plus 8% tax and 20% service charge.

 

Modified Open Bar

  • Pouring any wines from our wine list & domestic and craft beers that we carry.
  • Mixed drinks are available on a cash basis.
    • Pricing: $10.95 for the first hour and $8.95 for each additional hour per person for every guest age 21 and older, plus 8% tax and 20% service charge.
  • Non-alcoholic options consist of iced tea, lemonade, soda, juice, coffee and hot tea.
    • Pricing: $15 per person under the age of 21 for the whole charter plus 8% tax and 20% service charge.

 

Bellini/Mimosa Bar (self serve)

  • Includes 4 exotic juices plus OJ and unlimited champagne
  • $10 per person per hour plus 8% tax plus 20% service charge
